🎥🍷🍇Vorige zomer trok ik naar de Portugese wijnregio Bairrada voor een bijzondere roadtrip door de wijngaarden met Filipa Pato en William Wouters. Geen klassieke rondleiding, maar een blik achter de schermen van een wijnbedrijf dat de natuur als belangrijkste bondgenoot ziet.

📍Van biodynamische wijnbouw en varkens die op een natuurlijke manier helpen de bodem gezond en levendig te houden tot het gebruik van drones die kruideninfusies, zoals lavendel, over de wijngaarden verspreiden: traditie en innovatie gaan hier hand in hand.

Last summer, I travelled to Portugal’s Bairrada wine region for a unique road trip through the vineyards with winemaker Filipa Pato and William Wouters.

Rather than a traditional winery tour, it was an immersive look at a wine estate where nature is the greatest ally. From biodynamic viticulture and pigs that naturally help keep the soil healthy and alive to drones spraying herbal infusions, such as lavender, across the vineyards, tradition and innovation go hand in hand.

BIODYNAMIC WINES

Sommige wijndomeinen imponeren met architectuur of prestige. Filipa Pato en William Wouters laten liever hun wijngaarden spreken.

Hun manier van werken is diep geworteld in de biodynamie, waarbij de natuur niet wordt gestuurd, maar ondersteund. Gezonde bodems, biodiversiteit en inheemse druivenrassen vormen de basis van wijnen die hun herkomst eerlijk weerspiegelen. Zelfs moderne technologie krijgt er een natuurlijke plaats: drones verspreiden kruideninfusies, zoals lavendel, over de wijngaarden, terwijl varkens meehelpen om de bodem op een natuurlijke manier gezond en levendig te houden. Traditie en innovatie gaan hier moeiteloos hand in hand.

During my visit to Portugal’s Bairrada wine region, I joined Filipa on a road trip through the vineyards. It was far from a traditional winery tour. Instead, it offered a unique opportunity to experience firsthand how their philosophy comes to life in the field. Their approach is deeply rooted in biodynamic viticulture, where nature is not controlled but supported. Healthy soils, biodiversity and indigenous grape varieties are the foundation of wines that truly reflect their origin. Even modern technology has found its place: drones spray herbal infusions, such as lavender, across the vineyards, while pigs naturally help keep the soil healthy and alive. Here, tradition and innovation coexist in perfect harmony.

Filipa, dochter van de legendarische Luís Pato, combineert haar opleiding als chemisch ingenieur met internationale ervaring die ze opdeed tijdens oogstperiodes in Frankrijk, Argentinië en Australië.

William, afkomstig uit een Antwerpse horecafamilie, bouwde een indrukwekkende carrière uit als chef, sommelier en restaurateur. Hun gedeelde passie voor gastronomie en wijn vormt vandaag de motor van hun wijndomein.

Filipa, daughter of the legendary Luís Pato, combines her background in chemical engineering with international winemaking experience gained during harvests in France, Argentina and Australia.

William, who comes from a family of restaurateurs in Antwerp, Belgium, has built an impressive career as a chef, sommelier and restaurateur. Today, their shared passion for gastronomy and wine lies at the heart of everything they do.

Hun filosofie is verrassend eenvoudig: authentieke wijnen maken, zonder opsmuk. Ze werken uitsluitend met inheemse druivenrassen zoals Baga, Bical, Arinto, Cercial en Maria Gomes. In de wijnmakerij grijpen ze zo weinig mogelijk in, zodat elke fles een pure weerspiegeling wordt van de bodem, het klimaat en het karakter van het oogstjaar.

Their philosophy is remarkably simple: create authentic wines without make-up. They work exclusively with indigenous grape varieties such as Baga, Bical, Arinto, Cercial and Maria Gomes, intervening as little as possible throughout the winemaking process. The result is a collection of wines that express the character of their vineyard, the soil and the vintage with honesty and precision.
